Too often in the hospitality industry, special attention is paid to décor, presentation, and the taste of dishes (with varying degrees of success), but never to the composition, the origin of the ingredients used, and their potential negative impact on health or on nature. Low-quality industrial oil, GMO corn, fruits and vegetables saturated with pesticides, and the endless list of sweeteners, flavor enhancers, preservatives, texturizers, and colorants—all harmful to our health. Unfortunately, the luxury sector is no exception to this rule.
This is the great paradox: we travel for pleasure while neglecting our health. At Laba Laba, pleasure and health are inseparable.
That is why we have organized our sourcing with the commitment, whenever possible, to use only organic products. This approach concerns not only fresh produce but also all ingredients that go into the preparation of our cuisine.
As for fruits and vegetables, sourcing “organic” products in Tanzania is a real challenge, as there is no official certification. This means being present on the ground to monitor farms and ensure traceability.
Today, we can confidently say that at least 80% of the products we use are organic, and of course, we are doing everything possible to reach 100% as soon as possible.
